- [Chase] This episode of The Outsiders Club was brought to you by Florida's Department of Agriculture and Consumer Services. - Hey guys. What you been up to? - Hey Brandon, look at these shells. Oh, I can hear the ocean. - Ooh, cool. - Really? - Yeah, isn't it cool? Whoa, Chase, Chase. - What? - What are you doing? - I'm practicing, what does it look like I'm doing? - Well, do you mind giving me some space? - Sure. What is all this stuff, Daja? - Well, Daja went to the beach last weekend with her family. - I did, and I noticed these really distinct shells, so I've decided that I'm gonna make a wind chime. Hey Chase, you want to help me out? - Oh sure, I'd love to. - Project wind chime! - Wait a second. We'd love to, but Elainena and I are gonna head out to the lake. But we can't wait to see what it's gonna look like. - Cool, that's okay. So, on today's show we're gonna make a wind chime. And later on, we get to hang out at the Fuel Lab, which is a laboratory and also a kitchen. I'm gonna be making some healthy mac and cheese. Yeah, healthy mac and cheese. We'll see how it turns out. - And I get to go surfing with a professional surfer named Zoe. She's amazing. Check this out, guys. So I headed to New Smyrna Beach, and if you like surfing, you'll dig this place. It's known to have consistent wave action and cool surf shops. It was here I found Zoe waxing her board. - Hey. - What ya doing? - Just waxing my board, getting ready to go out. - Now how do you wax the board? - The first way, you can just go side, up, down, but the other way, you can go in circles, big circles. - Now, I've been surfing a few times, but Zoe's surfing?
(laughs) Let's just say she's on a whole other level. She's nine years old, been surfing since she was five, is already sponsored by brands like Billabong, and she's a team rider for Lopez Boards. This girl can surf. Well, thanks for letting me hang out with you. - No problem. - I see lots of people that have this on their board. What does that do? - This is to help your foot stay on the board. It helps you grip your foot when you're trying to do a turn. These two wet suits are basically for really, really cold days like this one. How the water's really, really cold. - [Chase] Did Zoe say it was really, really cold? - Really, really, really, really cold. - This is Florida. How cold can the water be? Oh, it's cold! - If you don't want to freeze, then you gotta put on a wetsuit. - Wish they were a bit easier to get on. Putting on a wetsuit is like putting on a second layer of skin. - Ta da! - And now, it's surf time. Cowabungi, or I think it's cowabunga. Whatever, let's just go surf. We make sure our leashes are on so we don't lose our boards. Then, we pick our spot and paddle out. My hands are numb. I tried to stay in one spot, where the waves won't be so big and wipe me out. Zoe, well, she's just awesome. And then, it's my turn. Wow, that was an A-plus wipeout. I'm actually pretty proud of that one. When you wipe out, stay calm and jump away from the board. Try to cover your head to protect yourself. - [Zoe] I like surfing because it's really open, I get to be outside, not in front of a TV. And when you're on the wave, it just feels amazing. - [Chase] After our first surf session, I ask Zoe to teach me a few tricks. - The first longboard trick is a cockroach. The second trick is a coffin. - [Chase] Wait a minute. The cockroach, the coffin? Are these even real tricks? I think Zoe's messing with me. - I never knew all that stuff about surfing. - I know, she took what I already knew, and she took it to a whole new level. - Cool, how was it hanging out with her? - She's not only an amazing surfer, but she's just a really nice person to be around. - Cool. Okay, ready to get started? - Oh yeah. - So, we already have all of our shells, but we're also gonna need some string or fishing line, two wooden sticks, one cordless drill, and S-hooks. - How are you supposed to string these together? The string won't go through. - That's where our cordless drill comes in. - Oh, I see now. - Right? - Yeah, and these sticks? Do they go on top of the chime like this? - Well kinda, they're for the top, and you have to make sure that they are perfectly balanced so that your wind chime isn't all lopsided. - Oh, so like that, or that, that, or even like that? - Mmm, no, let's just try to keep it balanced. - Okay. - Okay, yeah. - About these shells, what do you think lived in here? I bet something with pointy teeth that could devour and eat stuff from the sea or something like that. - (laughs) You're actually right. This is an auger shell, and the creatures that used to live in these were carnivorous, and they had barbed teeth, and they were mildly poisonous. - Just call me Showmaster C, yo yo. - Whoa, okay, what are you doing? - I'm drilling holes in the shells for you. - Just be careful, would ya? I'd say that this is a Code Green, no adult help is necessary, but caution should be taken when using tools. I got my dad to build this really cool board that'll make drilling holes in shells a lot easier. - Oh, cool. - Yep, so you just push against that, and then you'll drill the hole right there, so you don't have to hold it. - Oh, so you don't drill a hole in the middle. - No, you don't. You're just gonna push it back, and that way you don't have to hold it here, so it'll be a lot more safer. - Oh. - Yeah. - So you get the corners in the corner, and then, like that. - Yep, just like that. Oh, back up a little bit. See, you see it? That wasn't so bad. All right, only 40 more to do. - Let's get working. - All right, go ahead. - Oh, I almost forgot. Check this out, Daja. - Whoa, that doesn't look like real surfing. - Anyways. When we come back, you'll get to see me and Zoe invent a new sport. - You're watching The Outsiders Club. Don't go away.

- Hey, Zoe, can you teach me some long board tricks? The cockroach, the coffin? Are these even real tricks? I think Zoe's messing with me. Oh, well, it can't be anymore embarrassing than my last wipe out. I'll be tasting saltwater for a few weeks after that one. And I'm ready for another adventure. So we head to Quiet Flight Surf Shop to look through boards. - I'm gonna show you some boards. This is a long board. - This is an adult long board, right? - Yeah. Way down to a short board. - When you pick out a board, what do you look for? - Well, I know my style in surfing, and I look for the width, 'cause the fatness of the board, how big the rails are, 'cause let's say you have a really, really thick board. You won't be able to turn it. - This one's perfect, I'm a professional now. I just all of a sudden became a professional. This is an Indo Board. - An Indo Board is basically, it helps you stand up on it like that and try to get your balance, and it really helps you balance yourself when you're on a surfboard. - So it's like practice? - Yeah, and if you're really, really that interested in surfing, then you can get one of these and practice.

- Did you know how waves are created? Well, they're created by the wind. They come from all the way out there up to here so I can surf them. Well, Zoe too, but mainly her, 'cause I'm not much of a surfer and I always fall. Always remember, when you're surfing, you're at the beach. There's always something fun to do. With an old ski rope and my skimboard, Zoe and I thought it would be fun to pull each other. After some experimentation, finally figured it out. Bam, we're surfing, or skimming, or whatever it is, or whatever you call it, it's fun. Hey, Zoe, I think we just invented a sport. - Yeah, what should we call it? - Hmm, something that ends with dragging, I think. - Beach drag? - Beach drag. Yeah that's it, our new sport is called the beach drag.

After you finish eating something that's really good for you, you feel so much better. - So you can go back out again? - Mm-hmm. - [Chase] Surfing is the perfect mix of fun and exercise, and surfing with a group of close friends is the best way to do it. - I like being outside because there's so much space, and every day you go outside is another adventure that you take. - [Chase] Well put, Zoe. I have faith in it, one day, Daja. - One day. - Yeah. - Okay. - So I have the shells done. What do we do next? - Great, okay, and I think I have this, yeah, this is pretty even, pretty leveled, right? - Mm-hmm. - So now here comes the fun part. What we have to do is we have to make a string of shells, and we have to put them on the ends of these sticks. But we have to make sure that we use the same amount so that the wind chime isn't lopsided, do you know what I mean? - Yeah, I know what you mean. - Okay, so we're just gonna take our fishing line. - And then take a shell. - Just pick a shell. - I pick this one. Hello, and welcome to the Fuel Lab, where we experiment, cook, and learn all about new foods because - [All] Food is fuel! - Yes, food is fuel, and it fuels our very own outdoor activities. Today with me, I have Chef Justin. - Hey Daja, how are ya? - I'm great, how are you? - I'm wonderful. - Great, all righty, so what are we doing today? - Today we are making healthy mac and cheese. - I love mac and cheese. Hey guys, we're making mac and cheese. - Mac and cheese! - All righty, so what's the first step? - All right, well, the first step is we got our pasta cooking, just like a normal box pasta that you would buy. But, we are using whole wheat pasta. Have you ever had whole wheat pasta? - Nope. - Well, you're gonna love it. It's much better for you and much more healthy than that standard pasta. - All righty. - So we've got our water boiling just about over here, and it's already kind of par-cooked, and what the deal is, is that three-quarters of the way with our pasta cooked, we can go ahead and add our fresh veggies so that when the pasta's done, the veggies are gonna be cooked at the same time. - You want to put veggies in mac and cheese? - Absolutely, that's how we make it healthy and fresh. - No, they don't have veggies in the boxed mac and cheese. - Exactly, that's why we're making our own. - Oh, okay, okay, okay, I trust you. It'll be good, right? - It's gonna be awesome, I promise. All right, let's go ahead and add our veggies. You want to add our carrots shredded? - [Daja] All right, all of 'em? - Yeah, let's put 'em all in there. Yes, okay, then you can add our broccoli. Put it in. - [Daja] There we go. - And our cauliflower. - Are you sure? - Yeah, I'm sure. - It's gonna taste good with the cheese, right? - Absolutely. And now let's go ahead and give that a stir, so we get it all corporated and combined. - Okay, so how does this look? - It looks good. So what we're gonna do is we're gonna let this finish cooking, and the pasta's gonna finish up, and the veggies are gonna be nice and crisp and tender, so they retain a lot of their nutrients. We are in the Fuel Lab. - (laughs) Okay, makes sense. I love boxed mac and cheese. What's the difference between that and this? - Well, first off, we are using our own cheese, so no more of that powdered cheese stuff, and the beauty of it is you can use any kind of cheese you like. What's your favorite kind of cheese? - I'm a provolone type of person. - Ah, I love provolone too. Today we're gonna use cheddar. - Okay, I like cheddar too. Cheddar's good. - Yeah, it's gonna make it nice and creamy and gooey. So this is looking good. Our veggies have lots of color and they look crisp tender, our pasta's almost done, so I'm gonna take it back and drain it, bring it back, and then we're gonna add our creamy ingredients, and then we're gonna be able to taste it. - All righty. - Okay Daja, now that we've drained our mac and cheese, or our mac, now we can add our cheese and our cream. So I've got a little bit of half and half, you want to pour some of that in. - Sure. - Let's start with about half of that. Keep going. Stop. - Oh, okay. - Okay, perfect. Why don't you give it a nice stir. Looking good. Not that I didn't trust you, but now it's reassurance. - It's starting to melt a little bit. So what we want to do when we're spooning is we want to work around and kinda stir so we're not beating up the pasta. - So Chef, could I make this at my house? - Absolutely you can make this at your house. But whenever we're working on the stove top, we need to make sure to have adult supervision. - Okay. - Let's sprinkle in a little bit of this parmesan cheese. Do you like the parmesan? - I do. - Awesome, sprinkle in, sprinkle in, sprinkle in. - More? Yeah. - Yeah. Looks good. Look at that, it's getting creamy. - All right, so what's next? - All right, Daja, I think we're almost there, but one last thing, let's add a little bit of lemon juice. - Yeah, lemon doesn't go in mac and cheese. I can't put lemon in mac and cheese. - Well, what's gonna happen is this little bit of lemon juice is really gonna brighten up all these flavors and make your taste buds zing. - Okay. Okay, but what you want to do is you want to cup your hand under so you catch any seeds so that we don't get any seeds in our mac and cheesy. - Okay. - Squeezy, squeezy. Good. We'll give it one final stir, and I think we're ready to plate up. Yes. - Here we go. - [Justin] Yeah, looks good. - [Daja] Thank you. - All right, let's get this in there so we can taste it. Look at all those great veggies, mmm. It smells good too, and you know what? You made it! - We made it. - Right on. All right, so one final thing, let's just put a little garnish, a final sprinkling of the parmesan cheese. - [Daja] Final sprinkling. - Yes, beautiful. And a little bit of this parsley, just for color. Yes, and we're ready to taste. - Deal, so here's a spoon. - Thank you. - One, two, three.
